Whole bunch pressed and barrel fermented. Full malolactic fermentation, 12 months on lees in old French oak Barriques. Unfiltered and unfined. No additions except for a small amount of sulfur at bottling (10 parts). 500 bottles produced.

10 day pre-maceration cold soak. Wild fermentation in open-top fermenters, 80% whole bunches, 20% destemmed. 12 months on lees in old French oak barriques. Unfiltered and unfined. No additions except for a small amount of sulfur at bottling. 500 bottles produced.
